Here are two kid friendly carnivore summer foods…chicken nuggets and tacos.
The chicken nuggets use ground chicken and pork panko and the taco shells are made from a cottage cheese mix. Both turned out great and will be staples this summer.

Carnivore Chicken Nuggets

Carnivore Chicken Nuggets
1 lb Ground Chicken
2 Eggs Scrambled
Make a 2 TB ball of ground chicken, roll in egg white powder flattening it out. Then place in pork panko and press panko into chicken nugget.
Preheat lard to 350 degrees and fry each nugget for 5 minutes or until internal temperature is 160 degrees.
Carnivore Pork Taco

Carnivore Shredded Pork

Carnivore Shredded Pork
5.5 lb Pork Shoulder
Salt to taste
Remove pork from package and dry with a paper towel. I sear mine over medium to high heat in the crock pot insert. Once all pieces are browned I move the insert into the crockpot and let cook on high for 4 hours. I shred and salt and then let cook another 1 to 2 hours.

Carnivore Taco Shell

Carnivore Taco Shells
300 g Cottage Cheese
1 egg yoke
5 TB Melted Butter
Add all ingredients to a blender, blend until smooth. Line a baking dish with parchment paper and spray. Place 6 spoonfuls of tortilla batter onto the lined sheet tray and spread into tortilla shapes.
Bake at 350 for 15-20 minutes. You want the edges to brown so that they dont stick to the paper and are crispy.
I hope these two kid approved carnivore meals keep your families happy this summer. xoxo Kim
